Chicken CacciatoreI was looking through some Italian recipe books for ideas when I came across this very simple, tasty and flavoursome dish. It’s easy to make and can be cooked and left and reheated with no problems.  I added a small red chilli as I like a little hotness to my meals but it’s ok without.

  • 1 onion -thinly sliced
  • 2 garlic cloves - peeled and thinly sliced
  • 1 small chilli - sliced (optional)
  • 2 tins cherry tomatoes
  • 4 tablespoons mascarpone
  • 2 glugs of olive oil
  • 4 breasts of chicken
  • Handful of basil
  1. Preheat the oven to gas mark 5.
  2. Fry the chopped onion, garlic and chilli until the onion becomes translucent and soft.
  3. Add some chopped basil and the tin of tomatoes. Mix well together and simmer for 25-30 minutes.
  4. In the meantime cook the chicken in some olive oil until slightly browned all over.
  5. Add the cooked chicken to an oven dish.
  6. Once tomato sauce is cooked pour over the cooked chicken.
  7. Bake for 25-30 minutes.
  8. Serve with either potatoes or pasta and Parmesan.
