Chocolate And Almond SliceThis is a lovely moist Italian chocolate cake that is delicious with clotted or double cream – or no cream at all!  I use 85% cocoa solid chocolate (Green & Black) which makes it rich and sumptuous. It has no flour but a whole bag of ground almonds – yummy!

  • 100g butter
  • 250g good quality dark chocolate 4 eggs - separated
  • 160g icing sugar
  • 150g ground almonds
  1. Grease a 23cm loose based round tin and preheat oven gas mark 4.
  2. Place the chocolate and butter in a glass bowl and melt over a simmering pan of boiling water. (Don’t let the water touch the bowl – it makes the chocolate bitter).
  3. Set the melted chocolate mix to one side to cool.
  4. In a different pan, whisk the egg yolks and icing sugar until pale and fluffy (takes about 3 – 5 mins).
  5. In another pan, whisk together the egg whites until stiff.
  6. Pour the melted chocolate mix into the bowl with the egg yolks and mix together thoroughly.
  7. Add the ground almonds to the mixture and again mix in thoroughly.
  8. Add the egg whites and fold in gently with a metal spoon.
  9. Pour the chocolate mix into the pre-greased baking tin and place in the centre of the oven. Bake for 25-30 minutes.
  10. Remove from oven and leave to stand for 10 minutes.
  11. Remove carefully from the tins and place on a wire rack to cool.
  12. Dust with icing sugar and serve with cream.
