Madeira Cake

Serves: 8-10 slices
  • 240g softened butter
  • 200g caster sugar plus extra for sprinkling
  • Grated zest and juice of one lemon
  • 3 large eggs (or medium ones and use a little drop of milk if mixture too dry)
  • 210g self raising flour
  • 90g plain flour
  1. Grease and line a 23 x 13 x 7 cm loaf tin
  2. Preheat the oven to gas mark 3
  3. Cream the butter and sugar together until pale and creamy
  4. Add the lemon zest and cream into the butter and sugar
  5. Add an egg at a time with just under a tablespoon of flour and beat in well.
  6. Do the same again with the other 2 eggs
  7. Gently mix in the remaining flour
  8. Fold in the juice of the lemon
  9. Tip the mixture into the prepared tin
  10. Sprinkle 2 tablespoons of caster sugar over the top
  11. Bake for 1 hour or until a cake-tester (or skewer) comes out clean
  12. Leave to cool in the tin before turning out
