Madeira Cake

Serves: 8-10 slices
- 240g softened butter
- 200g caster sugar plus extra for sprinkling
- Grated zest and juice of one lemon
- 3 large eggs (or medium ones and use a little drop of milk if mixture too dry)
- 210g self raising flour
- 90g plain flour
- Grease and line a 23 x 13 x 7 cm loaf tin
- Preheat the oven to gas mark 3
- Cream the butter and sugar together until pale and creamy
- Add the lemon zest and cream into the butter and sugar
- Add an egg at a time with just under a tablespoon of flour and beat in well.
- Do the same again with the other 2 eggs
- Gently mix in the remaining flour
- Fold in the juice of the lemon
- Tip the mixture into the prepared tin
- Sprinkle 2 tablespoons of caster sugar over the top
- Bake for 1 hour or until a cake-tester (or skewer) comes out clean
- Leave to cool in the tin before turning out
