Garlic CiabattaGarlic bread is lovely with most pasta dishes. All that lovely crunchiness with the moist garlic aftertaste – lovely!   The addition of mayonnaise heightens the experience and really gets the juice buds wanting more. Try it – you won’t be disappointed!!

Garlic Ciabatta

  • 1 tablespoon mayonnaise
  • 2 tablespoons butter, softened
  • 1 bunch of basil
  • 1 small ciabatta
  • 2 tablespoons grated Parmesan
  • 2 garlic cloves, crushed
  1. Heat the grill to high.
  2. Beat together the mayonnaise, butter and garlic cloves until smooth.
  3. Chop the basil, stir it through the garlic mayo mixture.
  4. Season with salt and pepper.
  5. Slice the ciabatta lengthways and grill one side for approx 2-3 minutes. You only want it slightly toasted.
  6. Remove from the grill and place on a baking tray.
  7. Spread the un-grilled side with the garlic mayo butter.
  8. Sprinkle with grated Parmesan.
  9. Grill for 2-3 minutes.
