“OK – what shall I have for breakfast?” I thought to myself one warm sultry day (odd, as this was wet England!) I had been reading Annie Bell’s Gorgeous Desserts the previous day and had come across a recipe that suggested mixing yoghurt with icing sugar and lemon juice. What a great idea, I thought. When mixing fruits into Greek yoghurt I normally just use plain sugar.
So thinking about this recipe, and knowing I had all the ingredients, I set about making it. (Annie Bell suggests including passion fruit but as I didn’t have any, I just left it out.)
Granola Yoghurt Crunch

Ingredients
- 500g Greek yoghurt
- 50g icing sugar, sifted
- 1 tablespoon lemon juice
- Enough granola for 4 people
Method
- Blend the yoghurt with the icing sugar and the lemon juice.
- Spoon the yoghurt into 4 fruit glasses.
- Scatter the granola over the top.
- Serve!
