Pumpkin And Sunflower Seed BreadI put off making bread for years because I thought it would be so difficult, but it isn’t – it’s so easy!  I was really surprised at how easy it is – and how satisfying!  It’s the same basic recipe for most bread but then you add bits and pieces depending on what takes your fancy.  So – this particular recipe has pumpkin, sesame and sunflower seeds in it, which makes a lovely combination.

Pumpkin And Sunflower Seed Bread

Serves: 20 slices
  • 270g strong white flour
  • 60g fine polenta
  • 1 teaspoon salt
  • Packet of fast action yeast
  • 100ml warm water
  • 140ml warm full fat milk
  • 2 tablespoons pumpkin seeds
  • 1 tablespoon sesame seeds
  • 2 tablespoons sunflower seeds
  • Olive oil for baking
  1. Brush a baking tray and the inside of a large bowl with olive oil.
  2. Mix the flours, salt and yeast together in a different large bowl.
  3. Make a well in the centre and add the warm water and warm milk.
  4. Mix until you have a soft dough.
  5. Turn the dough onto a lightly floured surface and knead for 5 minutes until smooth and elastic.
  6. Shape into a ball and place into the oiled bowl.
  7. Cover the bowl with cling film and place bowl in a warm place for one hour.
  8. Turn out the dough onto a floured surface and punch down.
  9. Flatten out the bread and add the pumpkin seeds, sesame seeds and a tablespoon of the sunflower seeds.
  10. Fold and knead again for 2 minutes to incorporate the seeds evenly throughout the dough.
  11. Leave to rest for 5 minutes.
  12. Shape into a round ball and then flatten slightly.
  13. Place on the oiled baking tray and brush the top with a little olive oil.
  14. Cover with cling film.
  15. Place in a warm spot for 50 minutes to allow the dough to rise.
  16. In the meantime preheat the oven at gas mark 6.
  17. Brush the top of the dough with some water.
  18. Place baking tray in preheated oven for 35 minutes.
  19. Transfer to a wire rack to cool.
