Spaghetti alla puttanesca is hot, tasty and colourful and is another very easy recipe. Recipe books often explain that it literally means ‘Whore Spaghetti’ as it is hot, hot, hot! I normally add 2 birds eye red chillies (chopped) as I like this dish hot, but you may want to start with just one chilli and see how you go.

Ingredients
- Glug of olive oil
- 2 garlic cloves thinly sliced
- 2 red hot birds eye chillies thinly sliced (or one if you don't want it too hot)
- 10 Kalamata olives quartered or sliced
- 1 tin of good organic chopped tomatoes (you don't have to use organic)
- 1 tablespoon dried basil
- Few sprigs of fresh basil - chopped
- Salt and pepper to taste
Method
- Heat the olive oil in a saucepan.
- Sauté the chopped chillies and garlic till slightly opaque (don’t burn the garlic).
- Add the tin of tomatoes and dried and fresh basil.
- Add the sliced olives.
- Simmer for 30 minutes (with saucepan lid slightly ajar).
- Stir occasionally.
- Add salt & pepper to taste and add a few basil leaves at the end to give flavour.
- Serve with cooked spaghetti and Doe’s Salad.
