Tagliatelle With Smoked Salmon, Watercress And PeasMy husband enjoys pasta with salmon so I’m always on the look out for different pasta dishes that use these two ingredients. I came across this one in Rachel Allen’s Home Cooking recipe book.  As we quite like our meals with a little heat, I added a little cayenne pepper to the dish.

Tagliatelle With Smoked Salmon, Watercress And Peas

  • 500g tagliatelle
  • 200g Crème fraîche
  • 200g smoked salmon sliced into strips
  • 50g fresh or frozen peas
  • 25g grated Parmesan cheese
  • Squeeze of lemon juice
  • 2 tablespoons chopped chives
  • 50g watercress leaves, roughly chopped
  • Salt and pepper to taste
  • Cayenne pepper to taste (optional)
  1. Place the Crème fraîche in a saucepan and heat gently for 2 – 3 minutes.
  2. At the same time cook the peas in boiling water until cooked and drain well.
  3. Place the strips of salmon in the Crème fraîche.
  4. Add the cooked peas to the sauce.
  5. Stir in the Parmesan cheese.
  6. Season with the lemon juice, salt and pepper and cayenne pepper (if using).
  7. Set to one side until the pasta is cooked.
  8. Cook the tagliatelle as per the instructions on the packet and drain but keep back about 1 tablespoon of pasta water.
  9. Once pasta is cooked gently reheat the sauce.
  10. Add the chopped watercress to the saucepan with the tablespoon of pasta water.
  11. Add the drained cooked tagliatelle.
  12. Add the heated through salmon sauce.
  13. Toss all the ingredients and serve with a side salad.
